What removing a PNG background actually changes
A PNG already has an alpha channel: a fourth value per pixel that records how opaque that pixel is. What most PNGs lack is any use of it. Exported from a phone, captured as a screenshot or saved out of a document, every pixel is set to fully opaque — so the file supports transparency without containing any.
Removing the background means writing real values into the channel that was already sitting there. That makes PNG the easiest possible starting point: there is no lossy compression working against you and no format conversion to worry about.
